Spicy Pork in Coconut milk.

Ingredients:
1.5 lbs pork butt or belly sliced
2T olive oil
3 cloves garlic
1 medium onion
1 thumb of ginger sliced
2 bay leaves
1 T shrimp paste (bagoong)1 T fish sauce
1 can coconut milk (13.66floz)
1t chili flakes
2 Serrano chili
Salt and pepper to taste
Directions:
- With a vegetable chopper, chop onions, garlic and oinion.
- In medium heat. Saute in a pan onions, garlic and ginger for about 2 minutes.
- Add in the pork and cook until slightly brown.
- Add the dried bay leaves, coconut milk and shrimp paste. Cover and allow to simmer.
- Simmer for 10 minutes and add the serrano chili, chili flakes and fish sauce. Cook for another 5 minutes or until the sauce is reduced and thickens.
- Season with salt and pepper
- Serve with a bowl of warm rice
