Spicy Pork in Coconut milk.

Ingredients:

 

  • 1.5 lbs pork butt or belly sliced 

  • 2T olive oil

  • 3 cloves garlic

  • 1 medium onion

  • 1 thumb of ginger sliced

  • 2 bay leaves

  • 1 T shrimp paste (bagoong)1 T fish sauce

  • 1 can coconut milk (13.66floz)

  • 1t chili flakes

  • 2 Serrano chili

  • Salt and pepper to taste

Directions:

  1. With a vegetable chopper, chop onions, garlic and oinion. 
  2. In medium heat. Saute in a pan onions, garlic and ginger for about 2 minutes.
  3. Add in the pork and cook until slightly brown.
  4. Add the dried bay leaves, coconut milk and shrimp paste. Cover and allow to simmer.
  5. Simmer for 10 minutes and add the serrano chili, chili flakes and fish sauce.  Cook for another 5 minutes or until the sauce is reduced and thickens. 
  6. Season with salt and pepper
  7. Serve with a bowl of warm rice
