Ube Biko with Latik
Ingredients
Latik
- 1 can coconut milk
Biko
- 1 cup glutinous rice
- 1 can coconut milk
- 3/4 cup brown sugar
- 1/2 cup ube jam (ube halaya)
- 1 t ube extract
Directions
Latik
- In a pan cook 1 can of coconut milk in medium heat until it curdles mixing it often.
- Continue to cook until oil comes out and latik turns brown.
Biko
- Wash glutinous rice until water runs clear
- Cook rice like usual. 1 cup of glutinous rice to 1.5 cups of water
- In a pan, combine 1 can coconut milk, brown sugar, and ube jam. Bring to boil
- Add the cooked glutinous rice and continue to cook until theres no more liquid.
- Add the ube extract
- Spread in an 8″ pan
- Top with the latik
