Easy One Pot Japchae

  1. Cook the sweet potato noodles according to package directions. Mine took 6 minutes. Immediately rinsed in a running cold water. Drain and set aside.
  2. In a bowl, mix together light soy sauce, dark soy sauce and brown sugar
  3. In a hot wok, saute in olive oil the onions about 1-2 minutes.
  4. Add the mushrooms and cook until it softens.
  5. Add in the carrots and cook for another minute.
  6. Add the spinach and cooked noodles.
  7. Pour in the soy sauce mixture and a little water to help stir the noodles. 
  8. Once the liquid drains turn off the heat and add the chili flakes and sesame oil. Season with salt and pepper.
  9. Transfer in a serving plate and sprinkle with sesame seeds on top. 
Be careful not to over cook the noodles or it will get mushy.
