Easy One Pot Japchae

Ingredients:
- Sweet potato noodles/Japchae noodles.1/2 package of 1.5lb bag
- 1 T olive oil
- 1 onion sliced
- 1 medium sized carrot julienned
- 2 cups of mushrooms of choice
- 2 cups spinach
- 4 T light soy sauce
- 1 T dark soy sauce
- 2 T brown sugar
- 1 t chili flakes (optional)
- 2 T sesame oil
- 2 t toasted sesame seeds
- 1- 3 T water
- salt and pepper to taste
Directions:
- Cook the sweet potato noodles according to package directions. Mine took 6 minutes. Immediately rinsed in a running cold water. Drain and set aside.
- In a bowl, mix together light soy sauce, dark soy sauce and brown sugar
- In a hot wok, saute in olive oil the onions about 1-2 minutes.
- Add the mushrooms and cook until it softens.
- Add in the carrots and cook for another minute.
- Add the spinach and cooked noodles.
- Pour in the soy sauce mixture and a little water to help stir the noodles.
- Once the liquid drains turn off the heat and add the chili flakes and sesame oil. Season with salt and pepper.
- Transfer in a serving plate and sprinkle with sesame seeds on top.
Be careful not to over cook the noodles or it will get mushy.
