A Filipino stew with a tomato based sauced.

Ingredients:
- 2 lbs beef. Sliced about 1/4 in in thickness. I used brisket for this one.
- 2 T olive oil.
- 3 medium side potatoes
- 1 small can of liver spread
- 4 cloves of garlic chopped
- 1 medium sized onion
- 3 dried bay leaves
- 4 T tomato paste
- 1 T soy sauce
- 3 T calamansi or lemon juice
- 1 medium sized green bell pepper
- salt and pepper to taste
- chili flakes (optional)
Directions:
- In a bowl, marinade beef in soy sauce, 2 T lemon or calamansi juice, salt and pepper for 10 minutes
- Peel and cut potatoes into wedges.
- In a pan, pan fry in olive oil until brown. Set aside
- In the same pan, brown meat without the marinade.Set aside
- In the same pan cook onion and garlic for about 1-2 minutes
- Add the beef, the rest of the marinade, tomato paste, liver spread, chili flakes(optional) and water just to cover the beef. Cover pan
- Boil and simmer for about an hour so until the meat is tender. If the sauce is drying up and meat is not yet tender add more water. Sauce should be thick by the end.
- Add green bell peppers, fried potatoes and 2t calamansi or lemon juice and cook for another 7 minutes.
- Season with salt and pepper
- Serve with warm rice
