Spinach Mozzarella Ravioli Soup

 

 

 

 

 

 

 

A twist to the viral lasagna soup. This is semi homemade since the ravioli is pre made. Let’s not complicate things 🙂

Ingredients:

  • 1 T olive oil
  • 1T chopped garlic
  • 1 medium size onion chopped
  • 1 lb ground beef
  • 2 bay leaves
  • 1-25oz bottle of any red pasta sauce
  • 2T tomato paste
  • 1 t dried Basil
  • 1 t Italian seasoning
  • 3 cups beef stock
  • 1 t sugar
  • 1 lb ready to cook spinach mozzarella ravioli.
  • Parmesan cheese
  • Salt and pepper to taste
 
 

 

Directions:

  1. In a pot. Sauté onions in olive oil until translucent.

  2. Add in the garlic. Cook for another minute.

  3. Add the ground beef and cook until brown

  4. Add in the bay leaves, pasta sauce, tomato paste and beef stock. Cover and let it boil. 

  5. Add in the ravioli. Cover. Simmer to cook for another 8 minutes.

  6. Add in dried Basil, Italian seasoning and sugar. Cook for another 2 minutes

  7. Season to taste.

  8. Transfer in a bowl and top with grated parmesan on top or more mozzarella
