Ube Biko

Ube Biko with Latik

Ingredients

Latik

  • 1 can coconut milk

Biko

  • 1 cup glutinous rice
  • 1 can coconut milk
  • 3/4 cup brown sugar
  • 1/2 cup ube jam (ube halaya)
  • 1 t ube extract

Directions

Latik

  1. In a pan cook 1 can of coconut milk in medium heat until it curdles mixing it often. 
  2. Continue to cook until oil comes out and latik turns brown.

Biko

  1. Wash glutinous rice until water runs clear
  2. Cook rice like usual. 1 cup of glutinous rice to 1.5 cups of water
  3. In a pan, combine 1 can coconut milk, brown sugar, and ube jam. Bring to boil
  4. Add the cooked glutinous rice and continue to cook until theres no more liquid.
  5. Add the ube extract
  6. Spread in an 8″ pan
  7. Top with the latik

Enjoy it warm or cold
